Strawberry Mint Muffins


Strawberry Mint Muffins(12 muffins)



Ingredients
 
1 cup whole-wheat flour
1 cup spelt flour
⅓ cup vegetable oil
¾ cup brown sugar
1 cup almond milk
2 tsp baking powder
½ tsp baking soda
1 tsp mint extract
1 tsp vanilla extract
2 egg whites
½ cup fresh or frozen strawberries, diced

Directions

1 – Preheat the oven to 175°C
2 – In a bowl combine whole-wheat flour, spelt flour, baking soda and baking powder.
3 – In a separate bowl, whisk together milk, brown sugar, vegetable oil, mint extract and vanilla extract.
4 –In small amounts, add the flour mixture to the wet ingredients and stir well.
5 – Using a hand mixer or by hand, whisk the egg whites until soft peaks are formed. With a spatula, gently fold in the batter.
6 – Add the diced strawberries to the batter and mix for a few seconds.
7 – Pour the batter into a muffin greased pan and bake for 20 – 25 min.
